Abalone Supreme

This recipe calls for abalone, prosciutto, parmesan cheese, pine nuts and parsley. The combination is out of this world.
Ingredients -

4 Pounded Abalone Steaks
10 Strips Prosciutto
1/2 Cup Parmesan Cheese, grated
4 Tablespoons Roasted Pine Nuts, coarsely chopped
4 Tablespoons Flat Leaf Parsley, chopped
Extra Virgin Olive Oil
Butter, melted

 
Preparation:
  1. Place two strips of prosciutto on each steak.
  2. Sprinkle the steaks with the grated parmesan cheese and 1 tablespoon of pine nuts.
  3. Roll the steak into a flute, parallel with the strips of prosciutto.
  4. Secure the roll with a toothpick.
  5. Repeat with the remaining steaks.
  6. Lightly oil a shallow baking dish.
  7. Place each steak in the dish.
  8. Brush them lightly with oil and butter.
  9. Sprinkle with the remaining parmesan cheese.
  10. Bake uncovered at 175 degrees for 30 min.
  11. Sprinkle with the chopped parsely and garnish with lemon wedges.

This is a very light and healthy dish. It pairs really well with a nice garden salad and a bottle of crisp white wine.

This works well as an appetizer. Prepare the dish as directed and when fully cooked and ready to serve, cut each roll into 4 pieces and put a toothpick in it for easy eating.
