This is one of my favorite recipes. It’s delicious, buttery with the crisp taste and texture of the asparagus wrapped in some mouth watering prosciutto and parmesan cheese.
Ingredients -
2 1/4 Pounds Asparagus, spears trimmed
1/4 Cup Butter, plus extra for greasing
3 1/2 Ounces Prosciutto, sliced
1 Cup Parmesan Cheese, finely grated
Sea Salt
Preparation:
Preheat the oven to 350°F.
Cook the asparagus in salted, boiling water for 15 minutes.
Grease an ovenproof dish with butter.
Drain the asparagus and gently pat dry.
Spread out the prosciutto on cutting board.
Lay two large asparagus stems on each slice.
Roll up and fasten each roll with a toothpick.
Place the rolls in the prepared dish and sprinkle with the parmesan.
Dot with the butter and bake for 10 minutes.
Serve immediately.

Make sure that before you cook your asparagus you trim the ends. Take the asparagus in two hands and snap off the bottom. Most of the time the asparagus will snap right above the part that is really tough at the bottom.
