Cold Asparagus with Proscuitto and Lemon

This is a wonderful, tender and cold asparagus dish that is super easy to throw together. The combination of the zesty lemon and the salty and savory prosciutto make a perfect duo and a beautiful presentation to any meal.

Ingredients -

1 Pound Fresh Asparagus, trimmed
1 Package Prosciutto, (6 ounce)  
1 Tablespoon Lemon Juice
1 Teaspoon Lemon Zest

 
Preparation:
  1. Bring a large pot of lightly salted water to a boil.
  2. When the water comes to a hard boil, add the asparagus and cook it until it is tender but still crisp which takes about 4 minutes.
  3. Quickly drain the asparagus and plunge into a bowl of ice water to stop the cooking and maintain the bright green color.
  4. Drain again and pat dry with paper towels.
  5. Separate the asparagus into 5 small bundles and wrap each one with 2 slices of prosciutto.
  6. Sprinkle each bundle with the lemon zest and lemon juice.
  7. Serve cold.

If you can’t find any Prosciutto, then you can replace it with bacon, Canadian bacon or ham.
