Colorful Spinach and Prosciutto Side Dish

This is such a wonderful side dish that is the easiest to make and is absolutely bursting with the flavor of all the different ingredients.

Ingredients -

2 Tablespoons Extra Virgin Olive Oil
1 Package Frozen Chopped Spinach, (10 ounce), thawed and squeezed dry
4 Ounces Thinly Sliced Prosciutto, chopped
1 Jar Roasted Red Peppers, (4 ounce), drained and chopped
1 Jar Artichoke Hearts, (6.5 ounce), drained and sliced
1 Tablespoon Garlic Powder

 
Preparation:
  1. Over medium heat in a large skillet heat the oil.
  2. Add the artichoke hearts, spinach, red peppers and prosciutto.
  3. Season with the garlic powder.
  4. Cook 15 minutes, constantly stirring until heated through.

To get all of the water out of the spinach try to wring it well first then place the spinach in a clean dish cloth and squeeze it again.

I recommend serving this side dish with slices of French baguette, celery or crackers.
