Mushroom Prosciutto Pasta

If you love mushrooms and you love prosciutto then this is the dish for you. It’s creamy and delicious and very simple to make.

Ingredients -

4 Cups Uncooked Penne Pasta
1/2 Pound Fresh Mushrooms, sliced
1/4 Cup Onion, chopped
2 Tablespoons Salted Butter
10 Slices Prosciutto, chopped
2 Teaspoons Cornstarch
2 Cups Heavy Whipping Cream
1/2 Cup Fresh Parsley, minced
1/4 Teaspoon Fresh Ground Black Pepper
Parmesan Cheese, shredded

 
Preparation:
    1. In a large skillet over medium heat, heat the olive oil.
    2. Add the onion to the olive oil and cook, stirring constantly until tender which takes about 5 minutes.
    3. Stir in the evaporated milk, whole milk and lemon zest.
    4. Cook and stir for 1 minute, then remove from the heat.
    5. Bring a large pot of lightly salted water to a boil.
    6. Add the linguine and cook until just tender which takes about 8 minutes.
    7. Drain.
    8. When the pasta is al dente, return the skillet to medium heat.
    9. Drain the pasta.
    10. Stir it into the sauce along with the prosciutto, basil, parsley, mint and Parmesan cheese.
    11. Season with salt and fresh ground black pepper.
    12. Toss the pasta in the sauce until the cheese has melted and a light sauce is covering the noodles.
    13. Serve immediately in warm bowls.

If you cannot find prosciutto at your local deli then you can substitute thinly sliced ham or bacon
