Prosciutto Appetizer Cups

This appetizer cup is so good. With spinach, ricotta, parmesan and mushrooms it would make the meal. Now we have sliced prosciutto to add to the mix and it just really makes this a perfect appetizer dish.
Ingredients -
1 Package Frozen Spinach (10 oz. chopped)
8 Ounces Ricotta Cheese
1/2 Cup Parmesan Cheese (grated)
1 Cup Fresh Mushrooms (chopped)
2 Tablespoons Onion (minced)
1/4 Teaspoons Oregano
1/4 Teaspoon Sea Salt
1 Egg (slightly beaten)
12 Thin Slices Prosciutto
 
Preparation:

1. Preheat the oven to 375 degrees.

2. Cook the spinach and drain well.

3. Combine the spinach, Parmesan, mushrooms, onions, oregano, salt and egg in a medium bowl.

4. Spray miniature muffin tins with Pam.

5. Cut the prosciutto into quarters.

6. Press 1/4 slice into muffin tin, pressing against bottom and sides.

7. Spoon the cheese mixture into a cup about 2/3 full.

8. Bake for approximately 20-25 minutes.

9. Remove.

Peppered Ham
If you don’t have prosciutto then you can use peppered ham instead.

Parmesan Cheese

Do not use the pre-grated parmesan cheese that you find in the pasta aisle. Make sure when you make this recipe you either buy the fresh grated parmesan or you get a chunk of parmesan from your deli counter and shred it yourself. It really makes the meal if you use fresh parmesan.
