Prosciutto Asparagus Rolls

This is a very simple recipe but it is not simple on taste. It’s a fun dish to make when you are invited over or to a party. The difference in colors between the asparagus and the prosciutto are wonderful.
Ingredients -
2 1/4 Pounds Asparagus (spears trimmed)
1/4 Cup Butter (plus extra for greasing)
3 1/2 Ounces Prosciutto (sliced)
1 Cup Parmesan Cheese (finely grated)
Salt to Taste
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Cook the asparagus in salted, boiling water for 15 minutes.

3. Grease an ovenproof dish with butter.

4. Drain the asparagus and gently pat dry.

5. Spread out the prosciutto on the counter.

6. Lay two large or three small asparagus on each slice.

7. Roll up and fasten each roulade with a toothpick.

8. Place the rolls in the prepared dish, sprinkle with the parmesan, dot with the butter and bake for 10 minutes.

9. Serve immediately.

Choosing Asparagus
When selecting asparagus it is important that the asparagus is straight and firm. It goes bad very rapidly so make sure that you get them and either put them on ice or store them in your refrigerator.

If you plan on getting the asparagus early and using it for this recipe in a day or two, make sure that you put the asparagus upright in a bowl of cold water in your refrigerator.
