Prosciutto Parmesan and Pine Nut Bruschetta

This is an excellent appetizer to take to a holiday party or just when you want to have a few friends over to celebrate life.  Toasted baguettes topped with Parmesan cheese and prosciutto is always a hit with everyone

Ingredients -

1 Cup Salted Butter, softened
1 Cup Prosciutto, diced
1 Cup Parmesan Cheese, grated
Fresh Ground Black Pepper, to taste
2 French Baguettes, cut into 1/2 inch slices
1 Cup Pine Nuts, toasted

 
Preparation:
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream the butter in a medium bowl.
  3. Blend in the prosciutto, Parmesan cheese and ground black pepper.
  4. Place the sliced baguettes on a medium baking sheet.
  5. Heat them in the preheated oven until lightly toasted which takes about 10 minutes.
  6. Spread the baguette slices with the butter mixture.
  7. Arrange on a large serving platter.
  8. Sprinkle with pine nuts.

If you don’t have any baguette on hand, switch it with English muffins. Toast the muffins then follow the same directions.
