Prosciutto Pasta

The mixture of prosciutto, beef, onion, rosemary and garlic makes this dish wonderful. It is filling and tastes wonderful.
Ingredients -
2 Tablespoons Extra Virgin Olive Oil
1 Pound Ground Beef
2 Medium Onions (sliced)
2 Cloves Garlic (finely chopped)
1 Tablespoon Sugar
2 Teaspoons Salt
1 Teaspoon Ground Nutmeg
1/2 Teaspoon Dried Rosemary Leaves (crushed)
1/2 Teaspoon Pepper
1/4 Pound Prosciutto (cut into thin strips)
2 Cups Dry Red Wine
2 Cans Tomatoes (28 oz. each, un-drained)
1 Pound Rotini
Grated Parmesan Cheese
 
Preparation:

1. Heat the oil in a Dutch oven.

2. Cook and stir the ground beef, onion and garlic in oil until the meat is light brown and onion is opaque.

3. Stir in the remaining ingredients except the pasta and cheese.

4. Cover.

5. Heat to boiling and once it is boiling reduce the heat.

6. Simmer for another 15 minutes and stir occasionally.

7. Uncover and simmer, stirring occasionally, until the sauce has thickened which usually takes about 1 1/2 hours.

8. Cook the pasta according to the package directions.

9. Drain.

10. Serve the sauce on the hot cooked pasta.

11. Sprinkle it with parmesan cheese.

Smoked Ham
Thinly sliced smoked ham can be substituted for the prosciutto.

Planning Ahead

If you want you can make the sauce ahead of time if you store it in a tupper ware container In the refrigerator. Just make sure you don’t leave it in the refrigerator more than an hour. Just heat it up and serve when you want to make dinner.
