Prosciutto Pistachio Pasta

Pistachio are my grand mothers favorite nut. We used to have pisachio puddings, pistachio jello and this wonderful pasta dish. It has been handed down to me from her so I hope you like it.
Ingredients -
2 Tablespoons Butter
1 Onion (cut into thin wedges)
1/4 Cup Green Pepper (finely diced)
1/4 Cup Yellow Pepper (finely diced)
1/4 Cup Sweet Red Pepper (finely diced)
2 Tablespoons Garlic (minced)
1/4 Pound Prosciutto (sliced 1/8 inch thick and diced)
1 Cup Pistachios (coarsely chopped)
1 1/2 Teaspoons Dried Rosemary (crushed)
1/2 Cups Olive Oil
Grated Parmesan
Hot cooked Tubular Pasta
 
Preparation:

1. Melt the butter in a skillet.

2. Add the onion and saute until almost tender.

3. Add the green, red and yellow peppers, garlic, prosciutto, pistachios, rosemary and olive oil to skillet.

4. Continue to cook, stirring until hot.

5. Add parmesan to taste.

6. Spoon over hot pasta.

If you want to scale this recipe up then do it. The amounts listed here will feed four people. Double the recipe if you want to serve 8.

Cashews

If you aren’t fond of pistachios then try using crushed cashews. They also taste amazing with this dish.
