These wonderful dates are stuffed with Parmigiano-Reggiano cheese, and pecan halves then are wrapped with salty and delicious prosciutto ham and baked and the cheese is melted and gooey.
Place the pecan halves on a baking sheet and bake for 10 minutes or until the pecans are lightly toasted and very fragrant.
Cool.
Raise the oven temperature to 425 degrees F.
Make a slit along the top of each date.
Cut the Parmesan cheese into thin slivers.
Stuff each pecan half and a sliver of cheese into each of the dates.
Quarter prosciutto slices lengthwise into strips.
Wrap each date with a strip of the prosciutto.
Place the dates on a baking sheet and bake for 6 minutes or until the prosciutto is crisp and the Parmesan softens.
Transfer dates to a plate and finish them with a grinding of fresh black pepper.
Serve hot, warm or at room temp.
