Prosciutto Wrapped Parmesan Pecan Dates

These wonderful dates are stuffed with Parmigiano-Reggiano cheese, and pecan halves then are wrapped with salty and delicious prosciutto ham and baked and the cheese is melted and gooey.

Ingredients -

24 Pecan Halves
24 Large Pitted Dates
2 Ounces Fresh Parmigianino Reggiano Cheese
4 Ounces Prosciutto, sliced
Freshly Ground Black Pepper

 
Preparation:
  1. Heat the oven to 350 degrees F.
  2. Place the pecan halves on a baking sheet and bake for 10 minutes or until the pecans are lightly toasted and very fragrant.
  3. Cool.
  4. Raise the oven temperature to 425 degrees F.
  5. Make a slit along the top of each date.
  6. Cut the Parmesan cheese into thin slivers.
  7. Stuff each pecan half and a sliver of cheese into each of the dates.
  8. Quarter prosciutto slices lengthwise into strips.
  9. Wrap each date with a strip of the prosciutto.
  10. Place the dates on a baking sheet and bake for 6 minutes or until the prosciutto is crisp and the Parmesan softens.
  11. Transfer dates to a plate and finish them with a grinding of fresh black pepper.
  12. Serve hot, warm or at room temp.
